Scapes

Garlic scapes are in abundance this time of year.  They are the flower stalks of garlic plants and they’re delicious grilled with a little olive oil, salt and pepper.  We’ve been grilling them with asparagus from our garden.  They’re also yummy in stir fry.  If you run across some at your local farmer’s market, give them a try!

    I love garlic scapes! Unfortunately, we’re a couple of weeks behind up here in CT, and ours haven’t started yet. Try making a garlic scape pesto and freeze small portions. They are great in soups and stews in the winter.

    I haven’t come across these – even at our farmer’s markets – when you harvest these does it have any effect on the actual garlic head?

    Harvesting the scapes allows the garlic head to have more growth energy. In theory, it makes the cloves larger. You may not be finding them at the market because the farmers are keeping them for themselves. We do.
